Nitza Villapol Andiarena (1923-98), was a chef, teacher, cookbook writer and television host in Cuba. She has been called, by some the 'Cuban Julia Child' for her ability to communicate culinary arts to a popular audience. Born in New York to Cuban immigrants, Villapol lived there until the age of 11, after the collapse of the Machado regime. By the 1950s, Villapol was famous in Cuba for her standard cookbooks on Cuban cuisine. From 1948 to 1997 she had her own cooking show on Cuban television, one of the longest running shows in television Cuban history. After 1959, she sided with the revolution and remained a fixture in Cuban popular culture throughout her life. During the early 1990s, she managed to demonstrate on her show how to prepare traditional Cuban recipes under the difficult circumstances of rationing, poverty and shortages. This is her extremely scarce cookbook on Cuban Cuisine. I tried her Onion Soup and her Cornmeal and Crab (although I used ready prepared crab), both fairly simple and absolutely delicious.

Published before Castro's Cuba, this edition, unlike later editions, features illustrated product advertisements throughout the book. The author, Nitza Villapol, would later be known as the "Julia Child" of Cuban television, although one must consider Nitza's TV show preceded Julia's by thirteen years and lasted longer by seven. That's right, Nitza remained on National TV for 45 years as the host of her own TV cooking show - "Cocina al minuto" (Cooking in a minute). During the several decades she produced the TV show, Nitza guided her Cuban audience through the shortages of daily life with the determination to make something delicious from whatever was at hand. Villapol (1923-1998) was born in New York City to Cuban parents who moved back to the island when she was nine. This scarce copy, like many that were brought along the journey from Cuba to America, is well used - there are several pages that show the use of the previous owner. Covers are rubbed and stained. Blue cloth covered boards. Good.
